Game is meat from wild animals and birds that are hunted, and also includes those once hunted in the wild but now farmed; for example rabbit, deer and quail. Rabbit and deer can still be caught in the wild. Quail is always farmed. Game is often hung for flavour and tenderness. The longer the meat is hung, the more “gamey” the flavour, so tell your butcher how you like it.
